Guava Duff

Guava Duff is an old time favorite in Florida where guavas are more available. Guava pulp is made by forcing guavas through a sieve or process in the food processor..

1 cup sugar
3 eggs, beaten
2 Cups guava pulp
2 tablespoons butter
1/2 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon ground cloves
3 cups flour, all-purpose
2 teaspoons baking powder
  1. Cream the butter and sugar together.
  2.  Add the eggs, guava pulp, nutmeg, cinnamon and cloves.  Beat until smooth.
  3. Sift the flour and baking powder together.  Work the guava mixture into the flour to make a stiff dough.  (Add more flour if needed.)
  4. Place the dough in a  2 ½ quart heat-proof bowl.  Cover with lid or foil. 
  5. Place bowl onto a rack in a pan.  Add water so that it reaches halfway up the bowl. 
  6. Steam for 3 hours.  Serve with Butter Sauce (recipe below) or a hard sauce.

 

 

Butter Sauce:

2 Tablespoons butter
¾ cup sugar
1 egg, separated
1-3 tablespoons hot water

  1. Cream the butter and sugar.
  2. Add the egg yolk. 
  3. Beat the egg white until stiff but not dry.
  4. Fold egg white into butter mixture. 
  5. Add hot water, a teaspoon at a time, to make a smooth sauce.

This is an old recipe- the eggs are not cooked. Use pasturized eggs to prevent food bourne illnesses.
