Easy Southern Cooking/ Coconut Stuffed Oranges

These are great alongside turkey, duck, or chicken for a festive meal or serve as a dessert at the end. Use pasturized eggs, or a pasturized egg white product (such as Just Whites) to make the meringue.

 

Coconut Stuffed Oranges

6 oranges
½ cup chopped dates
½ cup chopped walnuts
½ cup shredded coconut
2 egg whites
½ cup confectioners sugar

  1. Cut slice from top of each orange.  Remove pulp and reserve pulp and shells.
  2. Add dates, walnuts, and coconut to orange pulp.  Mix and spoon into orange shells.
  3. Make a meringue by beating the egg whites in a clean bowl until stiff.  Gradually add confectioners sugar. 
  4. Spoon meringue onto oranges and place oranges on baking sheet.  Bake in a preheated 400 degree oven until lightly brown.
