These are great alongside turkey, duck, or chicken for a festive meal or serve as a dessert at the end. Use pasturized eggs, or a pasturized egg white product (such as Just Whites) to make the meringue.
Coconut Stuffed Oranges
6 oranges
½ cup chopped dates
½ cup chopped walnuts
½ cup shredded coconut
2 egg whites
½ cup confectioners sugar
- Cut slice from top of each orange. Remove pulp and reserve pulp and shells.
- Add dates, walnuts, and coconut to orange pulp. Mix and spoon into orange shells.
- Make a meringue by beating the egg whites in a clean bowl until stiff. Gradually add confectioners sugar.
- Spoon meringue onto oranges and place oranges on baking sheet. Bake in a preheated 400 degree oven until lightly brown.
