Banana Bread

Banana Bread has always been one of my favorites. My mother would make this and put it away. We weren't allowed to eat it until the next day. It definitely improves with storage- if you can wait. This quick bread uses the muffin method. Do not overbeat.

1 cup shortening
1 cup sugar
2 eggs
2 cups sifted flour
1 teaspoon soda
¼ cup nuts (optional)
3 bananas, peeled and mashed

Cream butter and sugar.  Beat in eggs and bananas.  Fold in flour into which soda has been sifted.  Add nuts.  Bake in 350 degree oven until well raised and browned. About 45 minutes.   Delicious served with cream cheese.
