Hopping Johns

Hopping Johns is traditionally a one-pot dish, believed to bring good luck in the New Year for those eat it. It is primarily prepared with black-eyed peas, rice, pork, onions, spices. This staple comfort food has been passed down through generations. I first had hoppin john's at a new year party hosted at my grandfather's house in Cape Canaveral. As a child, the dish tasted bland, mushy and off texture. I have since learned to appreciate it as an adult and has become a staple new years day dish.
I set this as intermediate because of the extra steps involved with fresh black eyed peas.
Mom had instructions to boil the beans for 30 minutes in 4 inches of water. You're basically rehydrating the beans and dumping the excess water. I drop these in room temp water the night before. but feel free to boil them for 30 minutes if you forgot.
I know super hard! but get everything into the cock pot on high for a few hours, then turn it to low and eat it. BUT if you didn't re-hydrate your beans, they will soak up more water than your rice and everything will be hard and crunchy forever.
