4 pounds very firm pears4 pounds sugar
 2 cups seedless   raisins
 2 tablespoons grated orange rind
 1 cup orange juice
 6   tablespoons lemon juice
 Hot sterilized jars
 
            Peel pears, quarter and core.  Slice very thin. Arrange pears and sugar in layers in a heavy kettle.  Let stand   overnight. Next day:  Add raisins, orange rind and juices.  Cook until pears are tender and syrup is thick. Pour immediately into hot sterilized jars and seal at once.    |
