Easy Southern Cooking/ Pear Conserve

Pear Conserve

Start a day ahead, this requires standing overnight.

4 pounds very firm pears
4 pounds sugar
2 cups seedless raisins
2 tablespoons grated orange rind
1 cup orange juice
6 tablespoons lemon juice
Hot sterilized jars

  1. Peel pears, quarter and core.  Slice very thin.
  2. Arrange pears and sugar in layers in a heavy kettle.  Let stand overnight.
  3. Next day:  Add raisins, orange rind and juices. 
  4. Cook until pears are tender and syrup is thick.
  5. Pour immediately into hot sterilized jars and seal at once.
