Easy Southern Cooking/ Peach Jam

Peach Jam

1 pound peach pulp
1 tablespoon lemon juice
1 pound sugar
Hot sterilized jars and lids

  1. Wash the fruit thoroughly.  Cut away any blemishes.  Peel and pit peaches.
  2. Crush or chop fruit, add lemon juice.
  3. Weigh fruit and sugar. 
  4. Put fruit into a heavy kettle large enough for the mixture to boil up.  Heat to boiling point.
  5. Add sugar and stir until the sugar is dissolved.
  6. Cook until thick, stirring frequently to prevent burning.  The cooking time will be from 10 to 20 minutes, depending on your fruit. 
  7. Jam is done when thick.  Pour immediately into hot sterile jars and seal.
