Strawberry Soup
Serves 6-8
2 quarts ripe strawberries
juice of 1 lemon
3 cups water
1 cup sugar
2 Tablespoons minute tapioca
1 cup sweet white wine
Clean and crush the strawberries.
Add the lemon juice, water, tapioca, and sugar.
Bring to a boil and simmer gently for 15 minutes
Remove from the heat and add the white wine.
Chill thoroughly and serve cold.
