Turkey Glazes

Any of these glazes can be applied to turkey, chicken or duck during the last 30 minutes of cooking. Each recipe glazes a 12-18 lb turkey. Double the recipe if your turkey is significantly larger.

1. Maple Glaze

1 large yellow onion, finely chopped
2 stalks celery, including tops, finely diced
1 large golden delicious apple, shredded
¼ teaspoon salt
½ teaspoon pepper
¼ teaspoon dry mustard
¼ teaspoon sage
1 cup maple syrup

Combine all ingredients in a saucepan.  Simmer uncovered for 30 minutes. 
Spread over turkey during the last 30 minutes of roasting.

Extra glaze can be heated and poured over the sliced meat at the table if gravy is not preferred.

2. Spicy Orange Glaze

1 ½ cup orange marmalade
1/3 cup dry white wine
1 Tablespoon Dijon style mustard
2 teaspoons prepared horseradish
1 Tablespoon dried onion.

Combine all ingredients.  Spread over turkey with a pastry brush during the final 30 minutes of cooking.
