Oven-Cooked Rice
3 tablespoons butter or margarine
4 tablespoons finely chopped onion
2 cups uncooked long grain rice
4 cups chicken broth
1/2 teaspoon salt
Preheat oven to 400 degrees F. Melt 4 tablespoons butter or margarine in large skillet over medium heat. Add onions and saute until transparent but not browned. Add rice and cook, stirring frequently for about 3 minutes. Add chicken broth (horn canned, or made with chicken bouillon cube) and salt. Heat, stirring to mix well. Transfer to a baking-serving dish. Cover (use foil if dish does not have close-fitting lid) and bake 20 minutes. Add more butter, toss with a fork and serve.
