Quick Orange Nut Bread


2 cups unbleached all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
½  teaspoon baking soda
1 orange (rind and juice)
Boiling water
2 tablespoons melted butter or margarine
1 cup sugar
1 egg, slightly beaten
1 teaspoon vanilla  
½  cup chopped walnuts

    • Preheat the oven to 350 degrees F. Grease a size (8 ½  by 4 ½ inch) loaf tin. Mix the dry ingredients in a bowl.
    • Grate the orange and squeeze the juice in a measuring cup. Add enough boiling water to make a cupful.  Combine with the orange rind, melted butter, sugar, beaten egg, and vanilla in a bowl and stir until blended.
    • Stir into the dry ingredients just until mixed. Add the nuts. Pour into the loaf tin.
    • Bake 1 hour or until done. 
    • Turn onto a wire rack to cool.
