Apple Butter
1 gallon sweet apple cider
2 ½ quarts apples, peeled, cored, and sliced
2 cups sugar
¼ teaspoon whole allspice
1 3 inch stick cinnamon
3 to 4 whole cloves
Hot sterilized jars and lids
- Boil cider in an open kettle until reduced by half.
- Add the apples and spices. Cook rapidly, stirring frequently until the apples are soft. Then reduce heat and cook slowly, stirring constantly.
- When mixture begins to thicken, add the sugar. Cook, stirring constantly, until mixture is very smooth and thick enough to spread.
- Pour immediately into hot sterilized jars and seal.
