Healthy Pork Meals

Sauteed Pork Chops with Chutney Glaze

1 Tablespoon vegetable oil
4 thin sliced pork chops
¼ cup dry Madeira Wine
1/3 cup chutney, chopped
1 large lime
salt and black pepper

  1. Heat oil in large skillet over high heat. 
  2. Add pork chops and cook until browned on both sides, removing to a platter when done.
  3. Add wine to drippings and stir to loosten brown bits on bottom of pan (fond).
  4. Bring to a boil and cook until wine is reduced by half. 
  5. Reduce heat to medium, return the pork chops to the skillet and add the chutney. 
  6. Cover and simmer until pork is cooked through, stirring occasionally. 
  7. Meanwhile, slice half the lime thinly for garnish.  Squeeze juice from remaining half and add to the pork.  Season with salt and pepper.
  8. Serve pork chops garnished with lime slices.

 

Savory Pork Piccata

1 ¼ pounds pork cutlets or pork loin, sliced and pounded thin
½ teaspoons black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 tablespoons lemon juice
1 teaspoon chicken flavored instant bouillon or 1 bouillon cube
2 Tablespoons chopped parsley
1 ½ teaspoons capers, coarsely chopped
lemon wedges, optional for garnish

  1. Season cutlets with pepper.  Heat olive oil and 1 tablespoon butter in a large skillet just until butter melts.
  2. Add cutlets, cook until browned on bottom, turn and brown other side, cook until cutlets are cooked through.  Remove to a platter and keep warm.
  3. Discard the fat from the skillet, add the lemon juice, bouillon and ¾ cup of water to the skillet.  Stir to loosen brown bits.  Boil rapidly for 3 or 4 minutes until reduced and syrupy.
  4. Remove skillet from heat, whisk in the 1 tablespoon of remaining butter until sauce thickens slightly.  Add parsley and capers. 
  5. Serve over spinach pasta, spoon sauce over all.  Garnish with lemon wedges if desired.

Spinach Pasta

½ - 1 pound spinach
1 - 2 teaspoons olive oil
1 clove garlic, minced
chopped parsley
1 pound spaghetti or linguini, cooked to al dente

  1. Heat the olive oil in a skillet.  Add the garlic and stir for 10-20 seconds. 
  2. Add the spinach and sauté until limp. 
  3. Remove from the heat and toss with the pasta.    Serve pasta topped with Pork Piccata.
