Charcoal Grilled Pan-Dressed Fish3 pounds pan-dressed fish, fresh or thawed1/4 cup melted butter or oil1/4 cup lemon juice1 1/2 teaspoons salt3/4 teaspoon paprikadash pepper1. Clean, wash, and dry fish. Place fish in a well oiled, greased, hinged wire grill basket. 2. Combine remaining ingredients and mix well. 3. Brush fish with sauce. Cook about 4 inches from moderately hot coals for 5 to 8 minutes. 4. Baste with sauce, turn and cook for 5 to 8 minutes longer or until fish flake easily when tested with a fork. Serves 6. |
Grilled Salmon
8 salmon steaks
1/4 cup fresh lemon juice
2 teaspoons Dijon mustard
1/3 cup soy sauce
1 teaspoon lemon peel, grated
1 clove garlic, crushed
1/2 cup vegetable oil
(Lemon wedges, for garnish )
1. Place in Salmon in a shallow glass dish.
2. Combine remaining ingredients, except lemon wedges. Pour over the fish. Marinate for 1 to 3 hours (or longer, if desired), turning once.
3. Broil or grill fish approximately 4 inches above moderate coals for 5 to 6 minutes per side, basting with remaining marinade.
