Easy Southern Cooking/ Pumpkin Cookies

Try decorating these cookies to look like Jack-o-lanterns. Push raisins, candy corn, or pumpkin seeds into place while cookies are still warm and soft.

 

Pumpkin Cookies

1/2 cup butter or margarine
3/4 cup brown sugar
3/4 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 cup pumpkin meat (homemade or canned)
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cloves
1 cup chopped nuts or raisins (optional)

  1. Preheat oven to 350 degrees.
  2. Cream butter or margarine with sugar. Add egg, vanilla, pumpkin, and mix well.
  3. In another bowl, mix flour, soda, salt, salt and spices.
  4. Add flour mixture to the pumpkin mixture. Add nuts or raisins.
  5. Drop by Tablespoons onto a greased cookie sheet. Bake approximately 15 minutes. Cool on wire rack. Makes about 3 doz.
